Chocolate Chippie Bikkies by the Parkes family

With our Around Our Table cookbook not faraway, we have a little taster for you….

An oldie but a goodie. With a little twist at the end to get the mouth watering! 

Makes two baking trays of bikkies 
225g softened butter 
1/2 cup brown sugar 
1/2 cup white sugar 
1 egg 
1 tsp vanilla essence
2 1/2 cup flour 
1 tsp baking powder 

250g dark chocolate roughly chopped (you can also use dark chocolate melts roughly chopped) 
Salt for sprinkling Preheat oven to 150c. 
Line two baking trays with baking paper. 
In a mixing bowl, beat together the butter and sugars until light and fluffy. 
Add the egg and vanilla essence and mix again. 
Slowly add the flour and baking powder to the butter mixture until the mixture is a dough and coming away from the sides of the bowl. 
With the roughly chopped dark chocolate, leave to the side about half a cup for sprinkling on top of biscuits. With the rest slowly mix into the biscuit dough. 
Spoon and roll spoonfuls of dough into a ball, flatten the top slightly, you should get about 12 - 15 bikkies per baking tray. Once all mixture is rolled and flattened with the remaining chocolate place these pieces onto the top of the bikkies and then sprinkle with a little salt over each. 
Bake the bikkies for about 10 - 15 mins or until a slightly golden in colour.
